IMG_2099I’ve spent the last 2 weeks doing my civic duty (read: jury duty) so I haven’t had much time to spend on the blog. My blog doesn’t even know who I am anymore. I came home last night and my blog was already in bed – my dinner in the oven.

Do Vegan Food Blogs dream of electric sheep?

Anyways. Just a quick note. A simple recipe (below). And a Happy Friday to You. I’ll see you all soon. I’ve got some making up to do with my blog. Maybe I’ll buy flowers.

Asparagus A La Mexicana

Toss Asparagus in canola oil, drizzle a litttle lemon or vinegar and sprinkle liberally with salt, cracked black pepper ande Roast for 12 – 15 minutes at 400 degrees until crisp-tender (toss a couple times in between). Slather a hot dog bun with vegenaise, add mashed avocado and Salsa Fresca.

Light, fresh, delicious and (pretty) easy!
